Simple sugar syrup is used to brush over cake sponges during assembly to keep the layers moist and this can be a good time to enhance the flavour of the cakes by flavouring the simple syrup. You can add lemon, rum, vanilla, the variations are endless. Have fun.
- 50 ml water
- 50 ml sugar
- any other desired flavours
- Dissolve the sugar in the water over medium heat.
- Take off the heat to cool and add any desired flavours.
