I used this for some delish cinnamon rolls as well as sourdough babka that did not rise. It’s a good basic filling for breads, cookies as well as brownies. Here’s the recipe.


  • 250g brown sugar
  • 150g unsalted butter
  • 2 tsp ground cinnamon


  1. Whisk butter and sugar together until pale and fluffy.
  2. Add the cinnamon and mix till combined.
  3. Set aside till ready to use or freeze them and thaw when you want to use them.
