I use this clear glaze on an osmanthus cake and it’ll be useful when I need some shine on my cakes.


  • 4g gelatin sheets
  • 200g sugar
  • 200g water


  1. Bloom the gelatin in cold water.
  2. Boil sugar with water in a saucepan for a minute.
  3. Take the saucepan off the heat.
  4. Add the bloomed gelatin in the mixture, stirring to combine.
  5. Use after the mixture is cooled slightly.
