This is a way overdue post. I had a bonding cum baking session with a good friend and she taught me this super easy almond cookies which is a common treat during the Lunar new year period. We stay really near to each other, but we are so busy, me with work mostly and her with her children, we hardly meet. This is a rare opportunity and of course I was excited to bake together. New year resolution is to make time to meet up and bake together again! So anyway, here’s the recipe, complements from my good friend, E. I think she wouldn’t mind sharing.

 

 

 

 

 

 

 

(Makes about 100 bite sized rounds)

Ingredients

  • 180g all purpose flour
  • 120g ground almond
  • 120ml canola oil or any oil that does not have a strong flavour
  • 100g caster sugar
  • 1tsp baking powder
  • 1tsp baking soda
  • a pinch of salt
  • egg wash (about 2 yolks)

Method

  1. Preheat the oven at 180 degrees and line baking trays with baking paper.
  2. Sift all dry ingredients together.
  3. Add the oil and mix till just combined. Do not over mix.
  4. Form rounds of about 4g by pressing some dough together with your palms.
  5. Glaze the rounds with egg wash and bake in the preheated oven for about 8 minutes, take them out of the oven and glaze one more time before baking for a further 12 minutes till golden brown.

  3. it is popular with the family (meaning, they are tasty)

and this will be parked under the annual lunar new year bakes, together with the pineapple rosettes.
