This chocolate cream serves as a good filling for cakes, easy enough to make and light in texture.

(Makes enough to fill 3 layered 7 inch cake)


  • 300g dark chocolate drops
  • 400g whipping cream


  1. Place dark chocolate drops in a heat proof bowl and melt over a pot of simmering water (bain marie).
  2. Beat the whipping cream till stiff peak.
  3. Fold the whipped cream into the chocolate gently and chill in fridge till ready to use.
