Gym friend, H, wanted to ‘initialise’ her oven and so we decided to bake something simple and healthy, you know, gym friend? ;P So granola seems to be healthy enough, with the high fibre and the absence of white sugar, but what is granola without some sugar right? This recipe uses maple syrup and honey which I think is healthier, yes? Here’s the easy peasy recipe.

 

 

 

 

(Makes a large tray)

Ingredients

  • 40g unsalted butter
  • 2 cups rolled oats
  • 1 cup nuts (I used almonds, seeds etc)
  • 3/4 cup cranberries (I added raisins too)
  • 1/2 cup desiccated coconut
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/8 cup fruit juice
  • 1/2 tsp salt

Method

  1. Line a baking tray with baking paper and preheat the oven at 160 degrees C.
  2. Place oats, nuts and desiccated coconut in a large mixing bowl and mix well.
  3. Place butter, juice, honey, maple and salt in a heavy saucepan and heat till boiling. Simmer this for about 10 minutes till liquid thickens slightly.
  4. Pour the hot honey mixture over the oat mixture and stir through evenly.
  5. Pour the above onto prepared tray, spreading the mixture over the tray as evenly as possible.
  6. Bake in preheated oven for about 14 minutes and take the tray out of the oven and stir the cranberries into the mixture.
  7. Bake for further 18 minutes and take the granola out to cool.
  8. When the granola has cooled, break them up into clusters and store them in airtight container.

They taste really good and won’t last too long in the containers before they run out. These make really lovely gifts, packed in pretty containers or even just packed in Ziploc bags.
